In Tunisia brik is served as a side dish!
Ingredients:
1 large baked potato
A small bundle of green flat-leaf parsley
2 table spoons of chopped onions
2 tablespoons of cappers
Salt and black pepper
6 spring-roll wrappers
2 teaspoons of harissa
8 eggs (1 egg per person)
lemons
2 1/2 tablespoons of tuna
shredded mozzarella cheese
spring rolls (1 roll per person)
frying oil
Chop the bundle of green flat-leaf parsley and wash it. Let it drip for about 10 minutes, mix the chopped leaf parsley with onions. Let it fry for about 2-3 minutes on a frying pan. Then let it cool for a while. Take the baked poatoe and mash it. Place the leaf parsley and onion in a bowl; add capers, shredded mozzarella cheese, tuna, harissa, and the mashed potato. Mix it and season it. Place 2 cups of frying oil in deep skillet to 350 degrees. Place the spring roll on a dish. Take 2 tablespoons of the mix and put it into the spring roll then drop an egg in the middle. Fold it and careful place the spring roll in the skillet allowing it to fry. Flip to the other sided. (BE CAREFULL WHEN FLIPING!) Drain the spring roll a.k.a the brik temporarily on absorbent paper. Serve the brik while still hot, with lemon wedges for best taste.
